Booking & availability

Dates, notice, numbers and how a booking actually gets confirmed.
How far in advance should I book?

Summer Saturdays go six to twelve months out, and the two August bank holiday weekends are usually the first to fill. Midweek dates, winter events and corporate lunches are often available at a few weeks' notice. If your date is inside a month, phone rather than fill the form in — it is quicker and Adam will tell you straight away whether it is free.

How do I know my date is actually held?

A date is held when the deposit clears, not when the enquiry arrives. Until then we will happily pencil it, but we cannot turn away another booking for the same day. You get a confirmation email with a reference number the moment payment goes through — that email is your confirmation.

What is the minimum number of guests?

It depends on the menu. Buffets and the vegetarian grill start at 25, barbeques at 30 to 40, and hog roasts at 60 because a whole hog needs the numbers to make sense. If you are under the minimum, ask anyway — a smaller joint or a different menu usually solves it.

What is the largest event you can cater?

We regularly run 300 to 400 guests and have done 800 at a festival with a second kitchen and extra staff. Above roughly 250 we will want a site visit or at least good photographs and a chat about access, power and service points.

Can I change my guest numbers after booking?

Yes. Final numbers are confirmed 14 days before the event and that is the figure you are charged for. Small movements before that are no trouble at all. Large jumps are usually fine too, but tell us as early as you can — the difference between 80 and 140 guests is a different hog and another member of staff.

Do you cater on Sundays and bank holidays?

Yes, at no extra charge. Bank holiday weekends book up earliest, so if you are planning one, get in early.

Food, allergies & dietary requirements

What we cook, where it comes from, and how special diets are handled.
Can you handle allergies and dietary requirements?

Yes, and properly — separate preparation, separate serving utensils, clearly labelled dishes. Vegan, vegetarian, gluten-free and halal are all routine rather than an afterthought. Give us the numbers when you book and we confirm them again the week before, because they always change.

How seriously do you take a severe allergy?

Very. Tell us in the notes and Adam will ring you to talk it through personally before the event. For anaphylactic allergies we plate that guest's food separately, keep it away from the main service, and hand it over ourselves so it cannot be mixed up on a buffet table. We will not pretend a field kitchen is an allergen-free facility, but we will tell you exactly what we can and cannot guarantee.

Where does your meat come from?

Free-range pork from local farms, beef aged 28 days, and butchery done in-house rather than bought in portioned. If you want to know the farm for a particular joint, ask — we can tell you.

Can we change the menu?

Every menu on this site is a starting point. Adam writes bespoke menus most weeks — a family recipe, a regional dish, a particular cut you have in mind, a full tasting order for a wedding. Tell him what you were imagining and he will price it.

Do you provide children's portions?

Children under twelve are charged at half the per-head rate, and under-fives are free. They generally eat the same food, though we will happily put out something plainer alongside if you would rather.

What happens to the food that is left over?

It is yours. We will box up what is safe to keep and leave it with you, and take away anything that has been sitting out. We do not take your food home with us.

On the day

Access, space, power, timings and what we need from you.
What do you need from us on the day?

A level patch of ground roughly 5m by 3m with vehicle access, and permission to put up a gazebo. That is genuinely it. We bring our own gas, power, refrigeration, lighting, service equipment and hand-washing facilities, and we take all our waste away with us.

How long before service do you arrive?

A hog goes on seven hours before carving, so for an evening meal we are on site around late morning. Barbeques arrive around three hours before service, buffets around two. We work quietly and stay out of the way of photographs.

What happens if it rains?

Nothing. The cooking is under a gazebo and the hog does not care about the weather. Worth thinking about where your guests will stand, though — we can point you at marquee hire locally if you have not sorted that.

Can you cater somewhere with no electricity or water?

Yes. Fields, woodland, paddocks and barns are normal for us. We are entirely self-sufficient — gas, generator, water containers and refrigeration all travel with us.

Will you clear up afterwards?

Yes. Our service area goes back the way we found it, all our equipment and rubbish leaves with us, and if you have hired crockery through us we take that away dirty so you are not washing up at midnight.

Do you serve the food, or is it help-yourself?

Both, depending on the menu. Hog roasts are carved to order by the chef with a queue that moves fast. Buffets and grazing tables are laid out and topped up by us. The larger packages include a uniformed front-of-house team who plate, clear and keep an eye on drinks.

Prices, deposits & payment

What things cost, what is included, and how you pay.
How much is the deposit and when is the balance due?

25% to hold the date, with a minimum of £150. The balance is due 14 days before the event, once final numbers are confirmed. Deposits are non-refundable inside 28 days of the event — the full cancellation scale is on our booking terms page.

Can we pay by bank transfer or on invoice?

Yes. Submit your booking request and you receive a proper numbered invoice by email with UK bank transfer details on it. Invoices are due within 7 days. Corporate purchase orders are fine — put the PO number in the notes.

What payment methods do you accept?

UK bank transfer against an emailed invoice, or corporate purchase orders by arrangement.

Is there a travel charge?

Travel within about 60 miles of Cambridge is included in the prices you see. Beyond that it is quoted separately — usually a modest fuel contribution rather than anything dramatic. You will always be told before you pay, never after.

Are the prices on the site the final price?

They are honest per-head prices with equipment, staff, service and waste removal already in them, which is why they sometimes look higher than a quote that adds all of that on at the end. The quote you build online is an estimate; the written quote Adam sends is the price.

Are there any hidden costs or surprise fees?

None. Prices are shown exactly as you pay them. Your written quote and invoice set out everything clearly and transparently, so there are no surprise lines or unexpected surcharges on the final bill.

Insurance, hygiene & credentials

The paperwork your venue will ask for.
Are you insured and food-hygiene rated?

Yes. We hold public liability insurance and all staff hold current Level 2 food hygiene certification, and the business is registered with the local authority. Certificates go out with your invoice as standard, because most venues ask for them.

Can you send documents straight to our venue?

Of course. Give us the venue's email address and we will send insurance, hygiene certification, risk assessment and method statement directly. Village halls and licensed venues usually want all four, and we would rather they had them a month early than the day before.

Do you have a risk assessment and HACCP paperwork?

Yes, both, and they are written for outdoor cooking with LPG rather than copied off a template for a restaurant. Ask and we will send them.

Who will actually turn up on the day?

Adam Skinner and a small team he trained himself. The same handful of people do every job — no rotating pool of agency staff who met an hour before your guests did. Adam is on site for every event he quotes.
